Omelets are my favorite breakfast dish. How can you make them perfectly? Many different recipes and methods have failed to work for me. So today, I want to share some tips and tricks with you so you can make your own delicious and fluffy omelets every morning.

Before we start making omelets, let's remember that eggs are temperamental. Eggs must be purchased fresh, preferably organic, and kept chilled until ready for cooking. If they are not kept cold enough, the whites won’t form properly. The yolks will also break down too quickly and become runny. This can make your omelets look bizarrely colored. If you want to make omelets right away, it's best not to use eggs that are too cold.

Another tip is to separate your egg before adding it into the pan. You don't want any white to get mixed up with the yolk because this could cause the omelet to curdle.

The egg can burn if it is placed directly on the stovetop. Instead, put the egg in the microwave for 10 seconds before putting it into the pan. The microwave heat will cook the egg just right without making it too hot.

Next, let’s talk about mixing the egg. When mixing eggs, it is important to thoroughly beat them. You need to turn the bowl of the mixer upside down. Then shake the bowl vigorously. This will whip the air around the bowl and mix the egg well.

Now it's time to have fun: pour the milk into the mixture. Mix half of the milk with the eggs. Then fold the eggs in half into the remaining milk. Don't worry if there are still streaks of egg visible; these streaks will disappear once you flip the omelet.

After folding the eggs, place the pan on medium heat and wait for the oil to start sizzling. Add 1/4 cup butter to the oil and swirl it around to coat all sides of the pan. The lid should be carefully opened. Sprinkle salt in the pan. A pinch of salt will help prevent the omelet from sticking to the pan.

Once the omelet has formed, cover the pan again and wait for the top side to set completely. Flip the omelet with a spatula, or flip it upside down. Cook the opposite side for another minute. Remove the omelet from the pan and serve immediately.

This recipe works best using whole milk. Skimmed milk is also possible.
